Like a good wine, the aging of books makes them so much more enjoyable. Having them disintegrate after you finish the story makes a good story in and of itself.
This only happens to paper made from wood pulp. If it's made from hemp or vellum it doesn't yellow. But seeing as how vellum is made from animal hide I think most people now-a-days would rather have hemp.
